The Chef & Owner
I was born and raised in Cuautla, a small town in the mountains of Jalisco, Mexico. As a child, our family grew and raised all of their own food — all-natural and organic — and harvested wild edibles from the land around us. Coming from a large extended family, everyone took part in cooking for the household. I found I truly enjoyed helping my grandmother prepare the food we ate.
I moved to Washington in 1993, starting as a dishwasher and prep cook, and worked my way up to Executive Chef. Classically trained in French cuisine, I've built mastery across Mediterranean, regional Italian, Spanish, and Asian cooking — all while staying rooted in the flavors of my homeland.
In 2016, I had the opportunity to take ownership of Roslyn Mexican Grill — and with it, the chance to bring the authentic regional cooking of Mexico to the heart of Washington. Every dish we serve is a reflection of that journey.
Rooted in History
While most Mexican cuisine is a fusion of native Mesoamerican and European cooking introduced by the Spanish during the 16th century, Pre-Hispanic food was the basic diet consumed by people across Mexico and Central America for over 6,000 years — and is still eaten today.
Corn, squash, beans, and chilis made up the foundation of these dishes, alongside a wide variety of spices, chocolate, and tomatoes. All of these ingredients work together to create incredible flavors unique to each specific locale in which they are prepared.
Today, there is a renewed interest in returning to these culinary roots. At Roslyn Mexican Grill, we've embraced that spirit — offering dishes cooked in the traditional style from several different states in Mexico, celebrating the depth and diversity of a cuisine that long predates borders.
